CO2 Extract is a thick syrup extracted from hop pellets using carbon dioxide. It contains alpha acids, beta acids, and essential oils and is extremely stable and concentrated. It can serve as a total or partial substitute for hops or hop pellets. Average utilization is around 32-38%. This product is commonly used to add bitterness and aroma to a wide variety of beers. Extracts retain the hop’s α-acids, β-acids, essential oils, aroma and bittering characteristics found in a leaf hop, but at a super critical level of potency. Hop extracts are highly-concentrated hop additions that provide convenience, efficiency, stability, consistency and flexibility to brewers.
